Ingredients:
- 1 cup urad dal (split black lentils)
- 2 cups idli rice or parboiled rice
- 1 tsp fenugreek seeds
- Salt to taste
- Water as needed
Instructions:
- Wash the urad dal and idli rice separately and soak them in water for 4-6 hours.
- Rinse the fenugreek seeds and add them to the urad dal while soaking.
- After soaking, drain the water and grind the urad dal in a wet grinder or a high-powered blender until it becomes a smooth and fluffy batter.
- Transfer the batter to a large mixing bowl.
- Next, grind the soaked rice in a wet grinder or blender until it becomes a smooth batter.
- Add the rice batter to the mixing bowl containing the urad dal batter.
- Add salt to the batter and mix well.
- Cover the batter and let it ferment for 8-10 hours or overnight in a warm place.
- Once the batter has fermented, give it a good stir.
- Grease the idli moulds with oil or ghee and pour the batter into the moulds.
- Steam the idlis in an idli cooker or a steamer for about 10-12 minutes or until cooked.
- Once done, remove the idlis from the moulds and serve hot with sambar and chutney.
