Idli

Ingredients:

  • 1 cup urad dal (split black lentils)
  • 2 cups idli rice or parboiled rice
  • 1 tsp fenugreek seeds
  • Salt to taste
  • Water as needed

Instructions:

  1. Wash the urad dal and idli rice separately and soak them in water for 4-6 hours.
  2. Rinse the fenugreek seeds and add them to the urad dal while soaking.
  3. After soaking, drain the water and grind the urad dal in a wet grinder or a high-powered blender until it becomes a smooth and fluffy batter.
  4. Transfer the batter to a large mixing bowl.
  5. Next, grind the soaked rice in a wet grinder or blender until it becomes a smooth batter.
  6. Add the rice batter to the mixing bowl containing the urad dal batter.
  7. Add salt to the batter and mix well.
  8. Cover the batter and let it ferment for 8-10 hours or overnight in a warm place.
  9. Once the batter has fermented, give it a good stir.
  10. Grease the idli moulds with oil or ghee and pour the batter into the moulds.
  11. Steam the idlis in an idli cooker or a steamer for about 10-12 minutes or until cooked.
  12. Once done, remove the idlis from the moulds and serve hot with sambar and chutney.
