Kara kuzhi paniyaram

Kara kuzhi paniyaram is a popular South Indian snack made with fermented rice and lentil batter.

Here's a simple recipe to make it:

Ingridients:
  • 1 cup idli/dosa batter
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped coriander leaves
  • 1/4 cup finely chopped curry leaves
  • 1-2 green chillies, finely chopped (adjust to taste)
  • 1/2 tsp ginger paste
  • Salt to taste
  • Oil for frying
Instructions:
  1. In a bowl, mix together the idli/dosa batter, finely chopped onion, coriander leaves, curry leaves, green chillies, ginger paste, and salt.  
  2. Mix well and set aside for 10-15 minutes. 
  3. Heat a paniyaram pan (appe pan) on medium heat and add a few drops of oil in each mould.
  4. Once the pan is hot, fill each mould with the batter mix until it's almost full.
  5. Cook the paniyarams for a few minutes until the bottom is golden brown and crisp.
  6. Flip the paniyarams over using a skewer or spoon and cook the other side until it's golden brown as well.
  7. Remove the paniyarams from the pan and repeat the process until all the batter is used up.

Serve hot with coconut chutney or tomato chutney.
